NH Collection Hotels & Resorts is celebrating its 10th anniversary with an international culinary initiative dedicated to gastronomy, local produce and sophistication. Under the name Signature Breakfast Constellation Edition, ten top chefs, good for 11 Michelin stars, are collaborating. Unique breakfast dishes temporarily served in selected NH Collection hotels worldwide. In the Netherlands, the launch took place at NH Collection Eindhoven Centre, with a starring role for star chef Yuri Wiesen.
For the occasion, Wiesen, chef of the Michelin-starred Restaurant Wiesen in Eindhoven, developed an elegant breakfast that sets the bar high. The dish consists of smoked Scottish salmon on an airy brioche toast, served with a soft quail egg, watercress and a silky Hollandaise sauce. This is accompanied by a glass of NH Collection 10th Anniversary Cava - a festive start to the day.
During a tasting at the hotel, we spoke to Wiesen about his contribution. "A breakfast should be quite an experience," he told us. "I wanted to serve something that exudes elegance but also remains accessible. Quality, balance and recognisability, that's the key for me."

The project brings together celebrity chefs from across Europe and Latin America. Each dish centres on local ingredients and culinary signature. In Spain, chefs like Javier Olleros and Paco Roncero provide creative combinations of egg, cheese, bread and delicate sauces. In Copenhagen, Nicolai Nørregaard surprises with a toast of smoked salmon and elderflower butter, while in Helsinki, Mikael von Lüders combines a traditional Finnish flatbread with a 64°C poached egg.
Latin America also emphasises flavourful combinations. Mikel Alonso from Mexico City brings a dish with truffled pork chops, Iberian cream and egg. In Buenos Aires, Luciano García presents a crispy rösti with aubergine cream and smoked trout.
"What makes this collaboration so special is that through breakfast you can really take a culinary trip around the world," said Jeroen Renders, General Manager of NH Collection Eindhoven Centre, brand director NH Collection Europe, in conversation with Hotelvak. "Each dish tells the story of its region and of the chef who came up with it."

Eindhoven was carefully chosen as the Dutch location within this anniversary project. Eindhoven is progressive, and full of energy. Exactly what NH Collection wants to radiate. The collaboration with Yuri Wiesen therefore immediately felt logical.
Wiesen's special breakfast dish was served to hotel guests as well as local visitors. The beauty of this promotion is that people from the city can also join in.
In ten years, NH Collection has become the premium brand within Minor Hotels, with nearly 100 hotels in more than 20 countries. International growth was underlined with new branches in Helsinki, Paris and Dubai, among others. At the same time, the brand remains committed to guest experience, local anchoring and culinary quality.
"This anniversary edition shows what NH Collection stands for: creating extraordinary moments, at the highest level," Pérez concludes.
Yuri Wiesen's breakfast dish is available at NH Collection Eindhoven Centre's hotel breakfast buffet until October 2025.
