De Echoput celebrates 70 years with opening of two new restaurants

On Sunday 22 June, the Klosse family celebrated De Echoput's 70th anniversary with a festive anniversary lunch in Hoog Soeren. During a festive afternoon on the terrace of the renovated restaurant Grand Bistro Echo, they not only looked back at seven decades of game gastronomy, but also looked ahead to the future. That future begins this week, with the official opening of the Wild Atelier - by Jonathan Zandbergen.

Four generations at the table

The afternoon brought partners, suppliers, family, friends and (former) employees together at the place where it all started in 1955. The presence of no less than four Klosse generations was special. The now 91-year-old Tineke Klosse moved with a personal speech in which she shared memories of the early days. "I am stunned that I am still allowed to experience this. I could never have imagined that De Echoput would still be so vibrant seventy years later, with a new generation managing to put its own modern twist on it again.", she spoke visibly emotional.

Festive opening of the Wild Atelier

In the presence of several leading chefs, the official opening of the Wild Atelier: the new fine dining restaurant from De Echoput and master chef Jonathan Zandbergen.

To the loud countdown of the company, Jonathan Zandbergen and Lodewijk Klosse cut the ribbon, together with their eldest sons. Afterwards, the company was shown around the new interior, where Zandbergen presented a natural dish of pike perch, land caviar and water lentils.

With this new restaurant, De Echoput's vision is again clearly visible: game is the starting point. Not as a product, but as a philosophy. Everything that lives freely in the forest, on land and in water is considered game. Master chef Jonathan Zandbergen brings a new generation of game gastronomy to life at De Echoput. Pure ingredients from local game management, fishing and regenerative agriculture in their most elegant form. Guests can choose between a 5- or 7-course menu and a full vegetable menu is also served.

Nature was also the inspiration for the interior: the sloping back wall made of sustainable wood and the soft green and sand tones create an intimate and relaxing atmosphere.

"For us, the Wild Atelier is a place where everything comes together: nature, craftsmanship and vitality," Lodewijk Klosse said. "Fantastic that we were able to share this moment with so many generations. And special to still be able to bring my grandmother into the latest developments of our family business."

The Wild Atelier welcomes its first guests from Friday 27 June and is open for reservations. More information and reservations via: http://wildatelier.nl/.

New interpretation for Restaurant De Echoput

The anniversary event took place in and around Grand Bistro Echo - the new name of the former Restaurant De Echoput, which also underwent a metamorphosis in recent months. This casual-chic restaurant offers guests lunch and dinner seven days a week, led by Executive Chef Peter Paul van den Breemen.

Culinary time machine

During the walking lunch, guests took a gastronomic journey through time with dishes by former chefs Robert Kranenborg and Theus de Kok, and current chefs Peter Paul van den Breemen and Jonathan Zandbergen. This linked the past culinary with the present - and the future.
