How Michelin stars came to be in the Netherlands
Initially, the Michelin guide was compiled with the motorist in mind. One Michelin star indicated that a restaurant offered excellent cuisine, while two stars indicated that it was worth the drive. Three stars indicated that the inspectors considered the restaurant to be of such high quality that it warranted a trip in its entirety. The list has since become the benchmark for the absolute top of the restaurant world.
How do you get a Michelin star as a restaurant? That question asked The Entrepreneur for the presentation of the 2023 Michelin stars to Werner Loens, Michelin's then chief inspector. For 37 years, he was 'the man in charge of the stars'. Watch and read it here interview with Michelin chief inspector Werner Loens back, telling what the criteria are.
How many Michelin stars can restaurants get?
Three Michelin stars is the maximum achievable for restaurant owners. Even in the Michelin Guide 2025, there is only a single restaurant in the Netherlands with three stars. That is De Librije of Jonnie Boer, who died earlier this year and his wife Thérèse.
The Librije in Zwolle retains its three stars despite the death of Jonnie Boer. Thérèse Boer, children Isabelle and Jimmie and chef Nelson Tanate of De Librije, once again entered the stage in Maastricht, moved.
Thérèse Boer told the MECC that they were prepared for the fact that the Michelin stars could also have fallen away. "Certainly in the past, if the chef left or fell away, the stars were also gone. We had many conversations with each other about this." According to her, they wanted to keep defending the stars with each other. "We shouted, whined, did everything, but also did everything for the three stars. Because I know Jonnie just wants that."
Which restaurants got a Green star in 2025?
Michelin's Green Star has been awarded since 2021 to chefs who integrate sustainability into their restaurants in a unique or distinctive way. This year, two restaurants will receive a Green Star:

Special honour Jonnie Boer
The presentation of the Michelin stars commemorated Jonnie Boer, who died unexpectedly in April. The top chef and co-owner of restaurant De Librije in Zwolle was posthumously awarded a so-called Mentor Chef Award. The tribute was presented to his wife Thérèse, his two children Isabelle and Jimmie and chef Nelson of De Librije, who took the stage to loud applause.
"We really feel he is with us," Thérèse Boer said at the ceremony. "He has taught us so much, he has given us so much love. He deserves this," said Boer, who has been at the helm of De Librije with her husband since the early 1990s. "Thank you for the lovely applause, I'm sure he hears it."
