Ten top chefs with a combined 11 michelin stars are highlighting locally produced ingredients at NH Collection Hotels in Europe and Latin America.

NH Collection Hotels & Resorts, part of Minor Hotels, is celebrating its 10th anniversary this year. To mark this milestone, the brand is partnering with ten Michelin chefs to introduce the exclusive 'Signature Breakfast Constellation Edition'. This culinary celebration takes place at ten NH Collection hotels worldwide and highlights one of the brand's key pillars: gastronomy.

Ten renowned chefs, together accounting for 11 Michelin stars, have each created a unique breakfast dish that honours local ingredients. Each dish is served with a matching drink and will be available at selected hotels in the coming months, until October 2025.

Top culinary experience at NH Collection Eindhoven Centre

NH Collection Eindhoven Centre is bringing the 'Signature Breakfast Constellation Edition' to the Netherlands. The Dutch contribution comes from renowned chef Yuri Wiesen of Restaurant Wiesen in Eindhoven, awarded a Michelin star.Eindhoven, a city known for innovation and design, is the perfect setting for this culinary collaboration. With his refined and creative style, Wiesen has developed an exclusive breakfast dish especially for NH Collection Eindhoven Centre: smoked Scottish salmon on brioche toast, served with a quail egg, watercress and a creamy Hollandaise sauce. This special dish is accompanied by a glass of NH Collection 10th Anniversary Cava, guaranteeing guests a festive start to the day.

Top chefs and their creations

Three of the participating hotels are in Spain. In A Coruña, two-Michelin-starred chef Javier Olleros (Culler de Pau, O Grove, Pontevedra) has created a dish for NH Collection A Coruña Finisterre. In Madrid, guests at NH Collection Madrid Palacio de Tepa can enjoy a creation by Paco Roncero, chef of his eponymous two-star restaurant in the iconic NH Collection Real Casino de Madrid. In Cáceres, NH Collection Cáceres Palacio de Oquendo serves an exclusive dish by Michelin-starred chef Alejandro Hernández Talavante (Versátil).

Top chefs elsewhere in Europe are also putting their culinary signature on exceptional breakfast dishes. These include Nicolai Nørregaard (Kadeau, 2 Michelin stars, Copenhagen), Mikael von Lüders (Finnjävel restaurant, 1 Michelin star, Helsinki), Iside de Cesare (La Parolina, 1 Michelin star, Trevinano) and Ciro Scamardella (Pipero, 1 Michelin star, Rome).

Breakfast dishes in Latin America are credited to two culinary luminaries: Luciano García, a leading pastry chef and owner of restaurant García in Buenos Aires, and Mikel Alonso, known for restaurant Biko in Mexico City.

A world tour of flavours

The Signature Breakfast Constellation Edition offers a unique culinary journey along NH Collection Hotels. In A Coruña, Javier Olleros has developed a dish with Galician eggs and cheeses: a soft-boiled egg with breadcrumbs and smoked cheese cream. Paco Roncero surprises in Madrid with oil bread toast with cucumber, miso yoghurt, Parmesan cheese and pearls of extra virgin olive oil. In Cáceres, Alejandro Hernández serves a slow-cooked free-range egg with confit ham, Iberian ham gravy and crispy breadcrumbs. In Rome, Ciro Scamardella presents a 65°C egg with pecorino cream, moron filet and a crispy wafer. In Milan, Iside de Cesare combines an airy egg white foam with crispy egg yolk, broccoli cream and guanciale.

Dishes in Scandinavia and Mexico also pay homage to local ingredients. In Copenhagen, Nicolai Nørregaard brings a toast with cold-smoked Bornholm salmon, elderflower butter and a honey-plum glaze. Mikael von Lüders celebrates Finnish cuisine with a traditional 'Röpörieska' flatbread with smoked salmon and a 64°C poached egg. In Mexico City, Mikel Alonso puts the focus on pork with truffled pork chops, poached egg and Iberian cream. Luciano García in Buenos Aires surprises with crispy rösti, smoked aubergine cream, pickled courgette and smoked trout.

10 years of NH Collection: a decade of excellence

NH Collection, Minor Hotels' premium hotel brand, will celebrate its 10th anniversary in 2025. With nearly 100 hotels in more than 20 countries, the brand has strengthened its global presence, with recent openings in Helsinki, Ibiza and Paris, among others.
